This is one of my favorite desserts here in Sierra Leone, totally not African - and not always are all the ingredients in the supermarket. I got the recipe from Nancy one of our American missionairies here in Freetown.

thumb_jollof_riceSaturday is a day off for "Fatu" our cook and on a regular basis we as a team will go out to eat for dinner, as it is still reasonable cheap here. Last night we said goodbye to Dr. Nell, she has been with us for just over two weeks and loved her time here, learning VVF surgery. I had a difficult time deciding what to eat and ended up with JOLLOF RICE - another African Dish you might like to try out ....

It is wonderful, I love it after my long run on Saturday with a cup of coffee and regularly I go back in memory lane when my friend Terri and I, on a Saturday morning after our run, would sit on pool deck of the Anastasis. However I love it before I go to work as well :)

brownieCoconut Brownies, this is more a dessert for us expats and our national staff when we have special meetings than for our patients. Even though they love their tea as sweet as possible they are not known to eat a lot of sweet dessert.  This is a great dessert with some vanilla ice cream and a cup of coffee (or tea).

We eat cassava leaves over cooked rice and with chicken or fish in the leaves/sauce....prepared with a lot of palm oil...  Cassava leaves (Manihot esculenta Crantz) constitute the main daily source of protein as supplement to the major staple food, the processed cassava roots in remote rural areas of Africa.
